Food is undoubtably a massive part of our lives, as in it keeps us alive...but it doesnt have to be done in a poor fashion. I feel food should be at the forefront of everyones life and something to celebrate. Cooking is not about your run of the mill buying a recipe book and churning out whatever it says (although it can be useful!) it is about getting ideas, gaining knowledge and creating your own recipes and methods of food production and design. Improvisation with food is one of my favourite things. It's great to come home, see what you have in the fridge and larder and put something together. Other sources of food are also available from the Wild larder.
It is for these reasons i grow my own vegetables and visit the country as much as possible to source my own wild food. This kind of gastronomic vigilante attitude is nothing new, for me it is something that fits and fits me well, i just feel we dont have to conform to the everything celebrity chefs and the Larousse gastronomique throws at us. It is about what you make of it
I have always had a keen interest in food, up until 5 years ago it was mainly consumption, then whilst being a poor student in Newcastle I felt I could do more with a piece of meat and some vegtables rather than eating spaghetti and baked beans. Also the Trout and Salmon I had caught from the surrounding countryside had to be done justice. It was from these beginnings that my love for all things food developed and along with a little help from a couple of friends, my brother and of course my mother I have become the confident cook I am today, working as a professional chef has also had its perks!
This Blog is about food, recipes, my adventures and wherever food takes me. But, most importantly, produce I grow in my garden (better than any organic supermarket veg), what can be obtained from our surroundings for free, methods of sourcing wild food and how to combine the wild larder with your larder at home.
